
Raspberry Velvet
Fresh or frozen raspberries are transformed into an intense, smooth and velvety dessert that can be served in a martini glass for a celebration.

Ingredients
- 1 (12ounce) package of frozen unsweetened raspberries, defrosted, or fresh
- ⅓ cup seedless black raspberry preserves
- ¼ cup water
- 2 teaspoons freshly squeezed lime juice
- 1 tablespoon sugar
- 4 sprigs of mint
Method
If you’re preparing this recipe ahead and freezing it, let it defrost or soften in the refrigerator for an hour or so before serving, to achieve the desired silky consistency.
- Push the raspberries through a food mill or puree the berries with the preserves in a food processor, then strain through a fine-mesh strainer to eliminate the seeds. Add the water and mix well. You should have about 2 cups.
- Place the bowl in the freezer and freeze, stirring every hour or so, until the mixture is half frozen and velvety.
- Meanwhile, pour the lime juice into a saucer and the sugar into another. Dip the rims of four stemmed martini glasses into the lime juice, then into the sugar. Place the glasses in the freezer or refrigerator until serving time.
- At serving time, divide the Raspberry Velvet among the prepared glasses and decorate with a sprig of mint. Serve immediately.
