Forge City Works

On August 2nd and 3rd, 2019 Jacques and the JPF visited the Billings Forge Community Works, now Forge City Works, in Hartford, Connecticut teaching a class for their culinary training program and hosting a fund-raiser. The class was a hands-on opportunity with the master to learn a variety of techniques from fundamental knife skills, to peeling shrimp, filleting fish, trussing a chicken, to whipping egg whites and cream.
