
Blueberries with Lemon and Mint
The combination of lemon and mint transforms blueberries from a snack into a simple, refreshing dessert.
Serves 3 to 4
Ingredients
- ¼ cup sugar
- 2 tablespoons mint chiffonade
- 1½ teaspoons lemon zest
- 1 tablespoon freshly squeezed lemon juice
- 12 ounces blueberries
- Crème fraîche, for serving
- Mint sprigs, for garnish
- Cake or cookies, for serving
Method
- In a medium bowl, stir together the sugar, mint, lemon zest and lemon juice until the sugar dissolves.
- Add the blueberries and stir until they are coated.
- To serve, spoon the blueberries into a dish and top with a dollop of crème fraîche and a sprig of mint. Add a piece of cake or cookies on the side.
