Baked Cod Asian Style
A simple dish for any firm white fish, with a touch of spice that can be prepared ahead and baked at the last moment.
Serves 3
Ingredients
- 1 ½ teaspoons wasabi paste2 teaspoons chili-garlic sauce or Sriracha
- 2 teaspoons sesame oil
- 1 to 1 ½ tablespoons olive oil
- 3 (6-ounce) pieces cod, about 1-inches thick
- ¼ teaspoon salt
- 3 cups broccoli, cut into florets
- ¼ teaspoon salt
- 1 ½ tablespoon butter
Method
- In a small bowl stir together the wasabi, chili-garlic sauce, sesame and olive oils. Arrange the cod in a shallow dish just big enough for them to lie flat. Spoon the sauce over the cod, coating both sides. Cover with plastic wrap and let sit for up to 3 hours.
- Preheat oven to 350ºF.
- Remove the plastic wrap and bake to your liking, 8 to 14 minutes.
- While the fish is cooking, put the broccoli florets in a microwavable bowl and sprinkle in 2 tablespoons water and the salt. Toss well so that the broccoli is wet and microwave for 2 to 2 ½ minutes or to your liking. Add the butter tossing well.
- To serve, arrange the fish on warm plates, spooning over any remaining sauce, with the broccoli and serve immediately.
