The incredible staff at our Community Kitchen partners are at the heart of the JPF, and we are always thrilled to highlight them in our Cook with Jacques & Friends Video Recipe Book. Last fall, JPF Members enjoyed a fantastic pierogi recipe contributed by Chef Urban, the Director of Culinary Arts at the Center on Halsted in Chicago, IL.
Chef Urban has over 20 years of experience using food as a vehicle for empowerment, equity, and transformation. Under Chef Urban’s direction, the Silver Fork culinary training program supports up to 60 aspiring culinarians each year in launching meaningful careers in the hospitality industry.
In this interview, Chef Urban explains that they have adopted Jacques’ motto “We are all equal in the eyes of the stove” at Silver Fork. They say, “Jacques Pépin saw that before it was trendy. It really speaks to who he is and the values that he carries.”
