To help support community based culinary training programs nationwide, the JPF assisted with the preparation and editing of the manuscript for the newly revised and expanded 2nd edition of Chef Timothy Tucker’s Destination: Chef – A Culinary Training Program Guide to Becoming Food-Service Ready in Ten Weeks. Chef Timothy Tucker is featured in our Video Recipe Book Cook with Jacques Pepin & Friends with his recipe for Smoked Turkey with Peach and Jalapeño Salsa. Chef Timothy Tucker began his career working at restaurants such as The Mansion on Turtle Creek in Dallas and The Painted Table in Seattle, but truly found his calling at The Salvation Army Center of Hope homeless shelter in Louisville, where he created a program to teach culinary basics to underserved populations.

He established the program in Miami, Florida, and then at the Salvation Army Kroc Center in Boston, Massachusetts. During summers, he is also the chef at Three Mile Island Camp on Lake Winnipesaukee in New Hampshire, and cooks at the Miles of Music musical camp retreat. He resides in Somerville, Massachusetts.

Food Shift Kitchen Companion: Getting the Most Out of Your Food

JPF grantee Food Shift in Berkeley, CA (a project of the Earth Island Institute) addresses the intersection of food and climate justice by developing practical solutions to reduce food waste, nourish communities, and provide jobs.

Their newly released Food Shift Kitchen Companion: Getting the Most Out of Your Food was supported, in part, with JPF grant funding and is a collection of recipes and stories from the Food Shift community, each providing inspiration and techniques to maximize ingredients already on hand, encouraging flexibility and substitution. The book includes a forward from the Jacques Pépin Foundation and a recipe from Jacques!
