Last week, Jacques, Claudine, and Rollie attended “Technique, Taste & Tradition: The Institute of Culinary Education’s Celebration of the Legacy of The French Culinary Institute” (FCI) in New York City. Jacques was the Dean of Special Programs at The French Culinary Institute, which later transformed into the International Culinary Center when Dean Cesare Casella expanded the global cuisine curriculum. It was a festive reunion of culinary luminaries, including former FCI chefs, deans, staff, and alumni, with remarks from Rick Smilow, Richard Simpson, Leland Clark, Lee Anne Wong, and of course, Jacques and Claudine Pepin.
Jacques spoke about his experience at the school, and raised a glass to chef instructors everywhere that are shepherding the next generation of culinary professionals. As part of the JPF’s mission to cement Jacques’ legacy as a food educator, we are thrilled that Jacques continues to inspire both professional chefs and home cooks alike.
